It’s been an exciting week around here! We are overjoyed by the safe arrival of our newest grandson! In spite of an ideal pregnancy, there were some tense days with concerns over a difficult, risky delivery. Imagine my relief when he was finally delivered safely! I’m happy to report that mother and baby are doing well. It’s not easy when your baby has a baby!

Ground Beef Skillet with Sweet Potatoes and Kale is just the sort of dish that I can prepare in our travel trailer when we go to visit Newest Grandson and his parents. Don’t you love it when you can cook up an entire dinner in one pot! This recipe is made extra-easy with the addition of gluten-free Beef Seasoning Mix. If you keep some of it mixed up on hand, there are many different dishes you can use it in such as Slow Cooker Beef Pot Roast and Grilled Steak.
Although I enjoy eating out in restaurants that prepare real food from scratch and can accommodate my dietary restrictions, I also like to be able to prepare our own food in the trailer when we travel. I keep dishes, my older set of pots and pans, and basic kitchen gadgets in the trailer year round.
However, we need to keep our spices fresh. I don’t want to leave seldom-used ones sitting in the cupboard growing stale. It would be a pain to haul out a dozen or more spices every time we pack the trailer for a trip or a weekend away. The solution is a pre-blended mix such as the Beef Seasoning Mix used here. It’s a key ingredient in this recipe, responsible for the amazing flavour!
This recipe also uses a little bone broth. Bone broth is so good for you! I have a very simple way of making it. You can read my method here. I try to consume as much of it as I can, but good intentions sometimes fall by the wayside. Recently, I’ve been just heating up a cup of broth to drink first thing each morning. That seems to be the easiest way to make sure I get some everyday.
