Sweet Potato Soup
Our autumn leaves have been gorgeous, but our weather is turning cooler. Now is a great time to cozy up indoors with a bowl of warm, flavourful soup. Creamy Roasted Sweet Potato soup simmering on the stove releases a delicious aroma to welcome guests!
Sweet potatoes are amazing! They are a very versatile source of vitamins and minerals. I like that they are roasted in the oven along with an onion for this recipe. Roasting is my new favourite way to cook vegetables! While you’re roasting yours, heat up your broth so it’s ready for the vegetables when they’re done. The flavour of coconut milk pairs beautifully with sweet potatoes and allows dairy-intolerant people to enjoy a creamy soup. No thickener is needed here. When everything is soft, I puree the soup with my immersion blender right in the pot.
