Depending on where you live, the curtain is rising on that beautiful time of year I’ll call RV Season! For those of us who are in southern Ontario, it extends from late spring until early fall. I look forward to the day when we can follow the sun and extend that season by staying wherever the weather is pleasant at the time. For now, though, we’re thinking about bringing our trailer out of storage soon.
As a nutrition-conscious, gluten-intolerant person, I give special thought to the food we’ll be eating while traveling. I like to purchase fresh food locally wherever we go. While it’s nice to eat out sometimes, we can certainly save money by preparing our own food. Then, it’s easier to control food quality and avoid the additives that so often hide in processed food. Now, I realize that most people don’t want to do elaborate cooking while they’re on vacation! I certainly like to keep food preparation as simple as possible when we’re in the trailer. So, I’ve perused my recipes and chosen five to share with you today that are particularly simple for RV preparation. None of them require multiple dishes or an oven. Each one utilizes vegetables as main ingredients and is a tried and tested recipe that I make myself. Some of them, I’ve been making for a very long time!
Maybe you don’t use an RV. Maybe you have a small kitchen. Maybe you’re just interested in wholesome, unprocessed, gluten-free food! Who doesn’t appreciate recipes that are quick and easy to make?

Lentil and Kale Salad makes a nice lunch by just mixing a few delicious ingredients together.
To whip up a great lunch or side with a few ingredients, try Spinach Salad with Egg.
To put some meat into the menu, Chicken Avocado Salad is made with cooked chicken.
