Do you have children in your life who are starting back to school now? Here in Ontario, most students start their school year on the day after Labour Day. Many of my American friends already have children in school. I know well how agonizing it can be not to have a variety of nutritious, portable food available to stash into a lunch before rushing off to school. Perhaps you’re the organized one who gets it done the night before, or your kids pack their own lunches. In any case, these muffins can help to make your job easier.
I worked full-time while our children were in school, so mornings were pretty hectic. Once they were old enough, our kids were responsible for getting their own lunches. Of course, when pressed for time anyone will grab whatever is easiest. I didn’t have much junk food in the house, but the good stuff may not have been as available as it should have.
My Terrible Mother Moment
One day when one of my daughters was probably in her early teens, there was an after-school incident involving a horse. She was knocked off, suffered a concussion, and had to be taken to the hospital. During the examination, the doctor asked her simple questions such as what day it was, her name, etc. to make sure she was thinking clearly. One of the questions was what she had eaten that day. Her answer was one small thing like a yogurt cup or something. The doctor looked at me to check the accuracy of that answer. I was very embarrassed to admit that it was probably true. Now if I had been making any of these four easy, healthy, gluten-free muffin recipes in those days, there would have been another nutritious option to grab!
