My brother-in-law is allergic to almonds. I don’t think this usually presents much of a problem for him except when he comes to my house! The poor guy!
He and my sister sometimes stop in and stay overnight when they are traveling through. I’ve served muffins and cookies made with almond flour. For breakfast, I usually have granola made with almonds and served with almond milk on it!
Well, they stopped by the other night, and I’m happy to report that I was able to pull these Blueberry Coconut Muffins out of the freezer! They are not only gluten- and grain-free, but they are entirely nut-free! To top it all off, everyone commented on how good they are!
