Preheat oven to 350F. Prepare a 12-cup muffin pan either by oiling or lining with papers.
Mix all ingredients except blueberries together with a whisk, electric mixer, food processor, or high-speed blender. If you’re not using a high-speed blender, the coconut oil will need to have been softened.
Stir in blueberries and scoop batter into prepared muffin cups.
Bake for 30 minutes or until muffins test done in centre.
