Creamy Blueberry Banana Smoothie tastes rich, smooth, and slightly sweet. Blueberries and spinach contribute to the deep colour and provide an abundance of antioxidants and vitamins.
Sometimes the best smoothie combinations are created out of what you have on hand! One day, later on a Saturday morning during our Elimination Diet Meal Plan, we were craving a smoothie. This was about the time of day that we would usually have sat down with coffee and a sweet. Although there are lots of smoothies in the diet, there just weren’t any for this particular day. So, I whipped one up from what we had on hand.

There were two bananas about to become overripe that I had just sliced up and put into the freezer earlier that morning! (could have saved a clean container there!) I used coconut milk from a carton, frozen blueberries, fresh spinach, and organic true cinnamon. The result was delightful!

So, instead of the scheduled mid-morning snack, we enjoyed this Creamy Blueberry Banana Smoothie. The Elimination Diet Meal Plan is good that way. As long as you eliminate the foods that you’re supposed to eliminate and eat the recommended amounts of foods being reintroduced on reintroduction days, you can be flexible within the plan. If there’s something else you’d rather eat or you have leftovers to use up, you can make adjustments. I have found that I often have leftovers that I put into the freezer for later. It’s fun to try out each of the new recipes with the plan. Having the entire meal plans, recipes, and grocery lists for three meals and two snacks every day of the week really solves the problem of deciding what to have for dinner!
