  1. Preheat oven to 450 F. Toss together vegetables with oil, thyme, cumin, and salt.
  2. Roast on foil-lined baking sheet for 25 minutes.
  3. Meanwhile, heat stock in a large pot. When the vegetables are finished, add them to the stock along with the black pepper and coconut milk.
  4. Using an immersion blender, puree until as smooth as desired. (If you don’t have an immersion blender, you can puree the soup in a regular blender. Be careful when working with a hot liquid; blend in small batches.) Allow the soup to simmer and blend the flavours until ready to serve.
  5. Garnish with chopped bacon and parsley just before serving, if desired.

While this is a quick soup to make, it also lends itself well to making ahead and simmering or reheating to serve.
