This Dairy-free Cherry Smoothie is a great way to enjoy the fresh cherries that are popping up all over Ontario this time of year! It contains cashew milk, which I made myself from scratch for the first time this week.
There are lots of recipes and instructions for cashew milk all over the web. I like that, unlike other nut milks, cashew milk does not need to be strained. With a high-speed blender, the cashews are ground so finely that they are smoothly incorporated right into the liquid.
I made mine by soaking 1 cup of raw cashew pieces in plenty of water overnight. In the morning, I drained them and rinsed them well. Then, I added 3 cups of filtered water to the nuts in my high-speed blender and processed on high for 60 seconds. That’s it – beautiful, fresh white cashew milk!
Dairy-free Cherry Smoothie
While, we usually end up just eating cherries fresh before I get a chance to do anything else with them, I thought it would be fun to try them in a smoothie. Whenever possible, I like to use fresh produce in it’s raw form for maximum nutritional benefits, ease, and great taste!
Smoothies are a great quick way to get lots of nutrients on the run. There are so many ways you can make them and numerous ideas for ingredients! To start, you’ll need some liquid or a yogurt (Coconut yogurt works for dairy-free). A banana is great for giving your smoothie a creamy texture and sweetness. You could use a frozen banana for this. Now is a good time to sneak in some green veggies. Spinach and kale are popular choices. You might want to include some nut butter and/or protein powder, too. Also add a couple of ice cubes if you wish.
Charlie starts work quite early each morning, so it’s usually a smoothie that gets him through until his mid-morning break. He prepares it the night before by putting the ingredients into a jar in the fridge. Then in the morning, he just dumps it all into the blender and gives it a buzz.
