I took these wonderful Grain-free, Dairy-free, Nut-free Chocolate Chip Muffins with us when we went camping a couple of weeks ago. Not only are they gluten-free; but they are also nut-free, dairy-free, and totally grain-free! Very much like my Blueberry Muffins, they are extremely versatile for a variety of dietary restrictions. And who doesn’t love a good chocolate chip muffin!
Our Family Muffin Story
Our kids have a story about muffins that they like to tell when the subject comes up! So, I think muffins make a great, portable snack. If you make your own, they can also be very nutritious. One summer several years ago, when our three kids were preteens to teens in age, we took a two- to three-week road trip from Ontario to the east coast. I had booked in advance all along the way motels with swimming pools and good breakfasts included. Our oldest, a boy, was of an age that we really got our money’s worth out of all-you-can-eat buffets! Then to stretch our food budget further, I made dozens of muffins in a variety of flavours to carry with us in the family minivan. I thought that when the kids got hungry, they could just help themselves, and we wouldn’t have to buy snacks. Muffins don’t need refrigeration, right? Well, maybe this was before I was aware of the limited shelf life of homemade food in contrast to manufactured baked goods with added preservatives. Or maybe they just lasted too long. At some point in the trip, someone discovered a mouldy muffin! Then another one. Before long, we realized that all of the remaining muffins had gone bad! There may have been a trail of muffins tossed out of the van windows one by one (without papers) for the wildlife along the Trans Canada Highway to consume!
Road Trip Snacks
I still maintain that muffins can be a great, healthy snack to keep on hand and take on road trips. However, I no longer leave homemade muffins unrefrigerated longer than a day. Now that there are just the two of us at home, I usually freeze some of each batch I make. They’re handy when unexpected visitors drop in. They’re also very convenient when we go anywhere in our RV. It’s a busy enough time packing up without having to do additional baking at the last minute.

That said, these muffins are fortunately very quick and easy to make, especially if you use a blender or food processor. Here’s a video of me making them in my blender.
