I’ll be taking Beeties with us when we take our trailer up to our Hideaway for the weekend. They’ll be a great snack around the campfire or with coffee as we relax in our Muskoka chairs overlooking our ravine.
The inspiration for this recipe came from a Style at Home recipe for Dark Chocolate Beet Brownies. I replaced the butter with coconut oil, making the dish dairy-free as long as you use dairy-free chocolate chips. I reduced the sugar and replaced it with coconut palm sugar. Then, I replaced the flour with almond flour or meal. You can’t usually replace almond flour for all-purpose wheat flour, but in this case, it absolutely works.
Easier Beet Brownies
Not only did I want these to be free of common allergens, but I also wanted them to be easy to make. While the original Style at Home recipe asks you to melt the chocolate chips before using them, I decided to try just stirring them in whole. While they hold their basic shape in baking, they soften beautifully and add a wonderful texture to the finished brownies.
If you want to hide the beets, melt the chocolate before stirring it in, grate the beets finely, and call the squares brownies. It’s okay. I said so! I assure you, they taste delicious!
