Instructions
  1. Combine first six ingredients. Whisk together until smooth.
  2. Cook over medium heat, stirring constantly, until mixture comes to a boil.
  3. Fold in the next four ingredients. Preheat oven to 400F.
  4. Roll out gluten-free pie crust and line a 9-inch pie plate.
  5. Trim the edges.
  6. Roll out a top crust.
  7. Pour filling into bottom crust. Cover with top crust and seal the edges. Cut slits in the top to vent it.
  8. Bake at 400F for 20 minutes.
Recipe Notes

Use leftover chicken or turkey, onions, carrots, and gravy to make preparation extra easy. If you have 1 1/2 cups of prepared gravy, you can omit the arrowroot flour and possibly reduce the salt.
