Preheat oven to 350F. Line 12-cup muffin pan with parchment papers.
Mix all ingredients except walnuts together with a whisk, electric mixer, food processor, or high-speed blender. If you’re NOT using a high-speed blender, the coconut oil will need to have been softened.
Stir, or gently pulse, in the walnuts. Scoop into prepared muffin cups.
Bake for 30 minutes or until muffins test done in centre.
