  1. Melt coconut oil over medium heat in a nonstick skillet. Add zucchini slices and cook until beginning to brown. Remove from pan and keep warm.
  2. Whisk eggs in a mixing bowl and cook in the frying pan, adding more oil if necessary to keep from sticking. Stir them as they cook.
  3. To assemble tacos, begin by laying out the corn tortillas. Layer on shredded cheddar, zucchini, eggs, salsa, avocado, and cilantro. Serve right away either folded or flat.
