Grilled Peach Salad with Pacific White Shrimp is an elegant light lunch or the stunning appetizer for a special meal. Either way, it’s a snap to toss together! The shrimp, peaches, and salad dressing can be prepared ahead, perhaps saved as leftovers from other dishes such as Grilled Peach Split. You can even omit the shrimp, if you wish, for a lighter salad.
Charlie and I recently went away for a weekend to celebrate a very big wedding anniversary. We were married quite young! While we are fortunate enough to do a considerable amount of traveling, taking longer trips to farther-off places, we wanted to do something to specifically mark this milestone. Our criteria was that our destination be close enough for weekend travel, be on the water, be big enough to have a nice hotel and selection of restaurants, and be a place that we weren’t already familiar with. We like to explore new places. Only one location fit the bill: Barrie, Ontario.
While in Barrie, we enjoyed the comfort of the Holiday Inn, long walks along the waterfront, and relaxing in the sun on the beach. Thanks to advance online research with a focus on gluten-free awareness, we had compiled a selection of restaurants to try while we were there. One of them was Cicco’s. We made a last-minute reservation, because we had been eating so much already and weren’t sure what time we would feel like eating again. The restaurant hesitated to save us a table, as they were quite booked up. We felt sorry for them when we arrived. As it turned out, there were quite a few empty tables. Several people who had made reservations had not shown up!
Cicco’s is located in a strip-plaza out in a suburban area of Barrie. It has a bar section and a mostly separate dining room. The decor is contemporary with a mix of banquettes and chairs along two rows of rectangular tables. Live music entertained us on the Saturday night when we visited. The menu features Italian dishes “home-made with the freshest ingredients” and brings fine dining to a family-friendly venue.
An Italian restaurant, Cicco’s has lots of pasta and pizza on the menu. As I often do when I eat out, I chose a salad with optional protein on it. The Arugula Salad with roasted peaches, goat cheese, vinaigrette and shrimp was very good.
I have enjoyed recreating this peach salad with boxed arugula, PC (national store brand) Goat’s Milk Chevre, frozen PC raw peeled Pacific white shrimp (thawed and sautéed in avocado oil), broiled peaches, and Simple Herb Vinaigrette. The recipe is for 2 servings. You can easily adjust the amounts for more with the little button by the number of servings on the recipe.
