  1. Cut the peach in half and remove the pit. Grill or broil it for about 3 minutes on each side. Set aside to cool.
  2. Saute shrimp in avocado oil over medium heat until pink. Set aside.
  3. Peel and slice the peach halves.
  4. Arrange lettuce on two plates. Place peach slices around it. Sprinkle goat cheese over all. Top with shrimp. Drizzle on vinaigrette. Serve.
