One year when Valentine’s Day fell on a day that I was working and Charlie wasn’t, he prepared me a lovely romantic home cooked meal. The main dish was a delicious shrimp stir-fry with rice noodles.
This year, when I asked what he’d like me to make him for his birthday, he requested something similar. As I quizzed him further, he named several ingredients he would like in it.
This is what I made with the ingredients he requested. It’s almost a One-Pot Wonder, but the noodles are first cooked separately. I tried cooking them in the pan with extra broth, but it didn’t work. It was too difficult to have little enough liquid for them to absorb all of it and yet have all the noodles well cooked. So I actually made it again a week or two later for you, dear readers. I think we’ve got it right now! And Charlie and I didn’t mind eating more shrimp stir-fry!
