  1. Prepare noodles according to package directions. Drain. Toss with sesame oil. Set aside.
  2. Meanwhile, heat a skillet over medium-high heat. Add one tablespoon coconut oil. Add garlic, ginger, and onion. Saute for one minute.
  3. Add carrots and celery. Cook, stirring, for a minute or two.
  4. Add remaining vegetables and broth. Cook, stirring until vegetables are somewhat tender but still brightly coloured.
  5. Remove the vegetable mixture and keep warm. Add one tablespoon coconut oil and the shrimp. Saute until the shrimp becomes opaque.
  6. Return vegetables and add the noodles to the pan. Toss together to combine while heating through. Turn off the heat. Toss in the tamari and serve.
