Vegan Veggie Dip with Cashew Yogurt is the dairy-free solution for a delicious, nutritious appetizer or snack. Serve it at parties or enjoy it on your own. While it does encourage more raw vegetable consumption, it can also be enjoyed with your favourite crackers or chips.
My husband and I are enjoying a wonderful week visiting with family in the Front Range area of Colorado. That’s where the eastern plains transition into the Rocky Mountains. The altitude where we’re staying is over 6,000 feet (more than 1,800 metres). We have our trailer parked among tall pine trees, the air is fresh, and we can see the Rockies in the distance. Although the temperature has been very hot in the daytime, it cools off nicely with gentle breezes at night.
While traveling, I love to have food that I can either make up ahead and bring with me or that is simple enough to make in the trailer. I brought my KitchenAid immersion blender set along on this trip, and it’s a real help in mixing up this easy recipe.
Vegan Veggie Dip
The base of this Vegan Veggie Dip with Cashew Yogurt is, of course, cashew yogurt. You can find the recipe and video for that here. Cashew Yogurt has a pleasant tartness and delivers the health benefits of heart-protective fats , antioxidants, and minerals from the cashews as well as beneficial bacteria from probiotics in the yogurt.
Adding avocado to your dip increases its creaminess and provides a substantial amount of healthy monounsaturated fatty acids.
So, even if you’re not following a vegan or dairy-free diet, I encourage you to try this dip for a change. I think you’ll like it!
